`When we think of making sweets in some special occasions and festivals the first sweet that comes to our mind is Gulab Jamun. But nowadays we don't usually make gulab jamun dough in that traditional way as most even go with an instant mix. Whatever alternate comes it just stands behind the traditional one..traditional recipes have the most unique and exotic taste .they are soft, yet firm on the outer layer ..so without wasting time lets start with it...



To make the gulab jamun in the traditional way it requires using milk khova in making the dough. You can either use a store bought or the homemade khova.In this recipe, I'm using a store-bought khova. For making homemade khova I have attached the recipe in the link down below.

INGREDIENTS


      For making the dough:


  • 125gm of khova/khoya(equal portions of sweetened and unsweetened khova)
  • 21/2 tablespoons of maida or all purpose flour
  • 1/4 t spoons of cardamom powder
  • 1/4 t spoons of baking powder
  • milk or water as required for making the dough
  • Oil for frying


     For making the sugar syrup:



  • 11/2 cups of sugar
  • 1/2 t spoon of cardamom powder
  • 1 t spoon of rosewater or vanilla essence

METHOD:



   Making Sugar syrup:


  • Take a wide saucepan and pour water into it and set the flame to medium heat.
  • add sugar to it and allow it to boil. The sugar starts to caramelize and keep checking until it reaches the sticky consistency and not the string consistency.
  • After it comes to the sticky consistency switch off the flame and add cardamom powder and rose water( or vanilla extract is optional) stir it well and allow it to rest.
  • in the meanwhile, we will also prepare the dough side by side.


 

  Making the dough and jamun:


  •  In a mixing bowl add the grated khoya/khova, maida and mix it well without any grits. now add baking powder and cardamom powder to the mixture and mix it well.
  •   Add the milk or water little by little at a time and mix them properly.you can knead them by fold and press method and be gentle towards them over kneading or rough kneading may lead to dryness which again leads to the development of crack.
  • Make 10-15 portions out of them.
  • Gently roll each portion between your palm creating small balls and make sure not to press them too hard.
  • now get ready to fry them by heating the oil in a frying pan under medium high heat.
  • Check whether the oil is hot and ready for frying them by letting in a tiny piece of dough
  • Now add the balls and fry them until they turn the deep brown on all sides. Opt first in first out method rather than batch frying for better results.
  • Add the fried jamuns in a tissue or kitchen towel to remove the excess oil.
  • Add all the fried jamun to the sugar syrup and allow them to absorb.
  • Now serve the Gulab jamun with some sugar syrup and decorate it with grated pistachios and almonds on top.
