                           South Indian style  Butter Dosa



Dosa is a major part of the south Indian daily menu which is very healthy and appetizing. It has very low calories and saturated fat. Dosa is made from fermented parboil rice and pulses. This can be a healthy alternative to overcome excess weight gain(obesity). Dosa has many variations in it according to the stuffing and ingredients used..such as masala dosa(dosa stuffed with potatoes and thick curry made out of it),Ghee roast(dosa's cooked with excess ghee)Rava dosa(rava  or sooji added in the dosa batter),Neer dosa(made with watery rice flour),Mysore masala dosa(black gram is used in the batter and Mysore style thick curry is stuffed inside dosa) and much more...



Nowadays street food vendors offer dosa's in n number of varieties which are as delicious as they are..so in this recipe, we will see how to make butter dosa in south Indian style with a little twist in it...

INGREDIENTS:



  • 1 cup  parboil rice

  • 1/4 cup of urad dal (white lentils)

  • 1/4 cup of rice

  • 1/4 cup of channa

  • Salt-to taste

  • 1/2 t-spoons of methi seeds(fenugreek)

  • 1 onion (nicely chopped)

  • 2 tomatoes (sliced)

  • 2-3 green chili(nicely chopped|)

  • 1/2 cup of Karam podi or idli podi

  • 1/2 cup of coriander

  • Cheese (grated or slices)

  • 100g of butter




METHOD:


                To make the dosa batter-



  • Wash both parboil and normal rice, fenugreek seeds in a bowl for two times and soak it for about 1.5-2hrs.
  • After soaking them add urad dal(lentils) and channa dal and again let this soak for another 2hrs.
  • Now grind it into a slightly coarse batter that is you should be able to feel the grainy texture of it.
  • Cover it with a lid and let it ferment for about 4-5hrs. This may even take a long time. After it is fermented add salt to taste and mix it well with some water until you get the free-flowing or the desired consistency.




       To make butter dosa-



  • Heat the skillet or a dosa tawa on a high flame and grease it well with oil. If it is iron skillet you can use a wet cloth (or even half cut onion works😉)to spread the oil all over and make them non-stick.
  • Now pour 11/2 or 2 ladle full of batter on to the tawa or skillet and gently spread them, into a circle.
  • When the batter starts to cook add idli podi or Karam podi and spread it well.
  • Add butter, chopped onions, some green chili, sliced tomatoes and some generous amount of grated or slices of cheese.
  • Now allow the bottom side to well cook( you will see the bottom side turning in to nice brown color).
  • Fold the dosa into half and take them out of the skillet using a spatula and it's ready to serve.




 NOTE:



  • you can serve it with your favorite sides as per your wish(like-chutney)
  • You can even use veg-upma or mashed potatoes in the stuffing.
  • without any stuffing, you can make plain butter dosa.which can be side with sambhar, chutney or idli podi
