The baked mac and cheese recipe is my ever favorite.Everyone of have our own twist in mac & cheese recipe.You don't have to always stick with elbow pasta for mac&cheese any pasta can fit for this recipe.I love cheese a lot.Hence you can find more combinations of cheese below.In this recipe i will give you the best mac and cheese recipe that everyone loves and craves for.So Let's start baking!..

INGREDIENTS:


  • 500 g of pasta(elbow is recommended but any pasta variety  fits).
  • 1/2 cup maida(all purpose flour)
  • 1/2 cup butter (unsalted)
  • 1 1/2 cup of milk
  • 4 cups grated cheddar cheese (white,sharp basically anything)
  • 3 cups gruyere cheese
  • 2 cups parmesan cheese
  • 1/2 tablespoon salt
  • 1/2 tablespoon pepper powder
  • 1/4 tablespoon paprika and oregano or italian herb mix(optional)

Prepping: preheat the oven at 160c.



METHOD:



  • In a large saucepan boil some water(for amount of water check whether the pasta is fully submerged in it).
  • Add salt and oil to the water.sa as the pasta will not stick with each other once after it is cooked. 
  • Cook well according to the instructions in the pack for al dente.(usually it takes 3-5 mins)
  • Drain the water (reserve some to add it while making sauce) and sprinkle some oil over the pasta and mix them well so that they won't get into clumps.
  • Grate the  cheese(better reserve some for topping).
  • Take another saucepan melt some butter and add 2 tablespoons of maida or all purpose flour and mix well.
  • now add milk and reserved pasta water(very little) whisk it well
  • continue to boil until it becomes thick like a sauce or soup.
  • Add some herb mix and chili flakes(seasonings).
  • Now add some portion  of the grated cheese and mix well until it becomes like a smooth paste.
  • Now take it off from the flame and mix the sauce and pasta well and pour this mixture in to  a baking tray..
  • Now top this pasta sauce mixture with the remaining cheese and sprinkle some more seasoning on top.
  • Bake them for about 15-20 mins until the top cheese layer melts and becomes golden brown with spots.
  • take it out of the oven and serve them hot!
Pro tip:pasta water can be used in making pasta sauce as it will give the sauce the thickness it requires and will boost up the taste.

Mac and cheese with variations :


Mac and cheese fry:
  • Follow the same steps as above till the baking step.
  • Now place them in the baking tray and refrigerate it.
  • After it becomes firm take it out and cut them in to desired shape.(I normally use cookie cutter to make the shapes i want.)
  • Now put these balls or cookie shaped in to maida slurry(made by mixing water and maida) and put them in panko breadcrumbs.
  • Fry them and sprinkle some seasonings above.
  • Serve it with tomato ketchup or any other sauce.

Five cheese pasta:
  • Add mozzarella ,cheddar,gruyere,parmesan and ricotta cheese
  • And follow the same steps above.
This is my favorite combination.This works well with any cheese combinations.
