Yummy Vegan Croissant Recipe





Croissant is all about layers.You will get to know how to make classic croissants in this recipe.It is easy to follow and simple to make.Just hoping you will love this!! as I do.Following this recipe will yield around 20 croissants(number may differ).Cooking a french classic croissant will take up to 3 days.The hard work of the 3 day croissant process yields the best satisfying croissant you would have ever had.The first time when I tried making this was not that better as I finally landed out with some croissant shaped ones!but it was a good try.finally I got happy with my result. INGREDIENTS


  • 1/2 kg plain flour/Maida/All purpose flour
  • 50 g of sugar
  • 150 ml of milk
  • 150 ml of water
  • 50 g butter(unsalted is better)
  • 10 g instant yeast
  • 10 g salt
EGG WASH (Alternative provided):Egg wash is one of the must in baking.But we vegans do not want that step to be done so you can leave it as it is or you can wash it with milk(gives brown color),butter/cream(gives soft and shiny texture) or water splashing on it gives nice crispy crust.

METHOD


  • Day 1-Dough making

  • Knead it for some time like about 5 minutes and store it in the fridge for a min of 15 hrs.

  • Day 2-dough Prep and lamination

  • to make butter layer just cut those butter in to slabs that is cutting them in length wise 1/2 inch thick slab and refrigerate until use.
  • Now roll the  dough in to square shape.
  • take the butter slabs and layer it in-between dough layer and seal it. 
  • Roll them in to rectangles(20*60 cm )and keep it inside the refrigerator.
  • Now take then out,fold and make rectangles out of it,refrigerate.
  • Keep repeating(x5).
  • Refrigerate finally.

  • Day 3-Proving and baking

  • Roll them(20*100 cm).refrigerate
  • Roll again after 20 mins and shape the croissants.
  • milk wash(if you are a vegan or go with egg wash itself).
  • Leave it for 2 hrs to prove.
  • again milk wash and bake for 20 mins.
  • yummy croissants ready!!!

Pro tip:egg wash will give shine and brown coat.Using milk wash will only give brown color and not shine.
